There are a number of photography books geared to young people. One recent book takes the approach of integrating digital photography into the classroom (see below). All are great for teachers, students and parents. The books are:

Explains light and shadow composition, how to avoid camera shake, color combinations, etc., and goes over basic functions that are common to all digital cameras.

The Kids’ Guide to Digital Photography: How to Shoot, Save, Play With & Print Your Digital Photos by Jenni Bidner ($14.95), ISBN 1579906044, Lark Books, 2004. Defines pixel and resolution to describe photo quality. Explains how computers, scanners, and printers work with a camera. Details software that alters and enhances images, adds text, adjust color and brightness, and changes background.
